For the Crust (Protein Boost)

  • 1 ยฝ cups oats (blended into flour)
  • ยฝ cup vanilla protein powder
  • 3 tbsp coconut oil (or butter)
  • 2โ€“3 tbsp honey or maple syrup

For the Lemon Filling

  • 4 large egg yolks
  • 1 cup Greek yogurt (plain, high-protein)
  • ยฝ cup lemon juice (fresh)
  • 2 tbsp honey or sweetener of choice
  • 1 tbsp cornstarch (or arrowroot for thickening)

For the Meringue

  • 4 egg whites
  • 2 tbsp honey (or another sweetener)
  • Pinch of salt

๐Ÿ”ช Instructions

1. Make the Crust

  1. Preheat oven to 175ยฐC (350ยฐF).
  2. Mix oat flour + protein powder + coconut oil + honey until crumbly but holds together.
  3. Press into a 9-inch pie pan.
  4. Bake 10โ€“12 minutes until lightly golden. Let cool.

2. Prepare the Lemon Filling

  1. In a small saucepan, whisk egg yolks, lemon juice, honey, Greek yogurt, and cornstarch.
  2. Heat gently over medium heat, stirring constantly until thickened (like pudding).
  3. Pour filling into the baked crust.

3. Make the Meringue

  1. Beat egg whites + pinch of salt until soft peaks form.
  2. Gradually add honey while continuing to beat until stiff peaks form.

4. Assemble & Bake

  1. Spread meringue over lemon filling, sealing edges.
  2. Bake 10โ€“12 minutes at 175ยฐC (350ยฐF) until meringue is lightly golden.
  3. Cool at room temperature, then chill 1โ€“2 hours before serving.
