For the Crust (Protein Boost)
- 1 ยฝ cups oats (blended into flour)
- ยฝ cup vanilla protein powder
- 3 tbsp coconut oil (or butter)
- 2โ3 tbsp honey or maple syrup
For the Lemon Filling
- 4 large egg yolks
- 1 cup Greek yogurt (plain, high-protein)
- ยฝ cup lemon juice (fresh)
- 2 tbsp honey or sweetener of choice
- 1 tbsp cornstarch (or arrowroot for thickening)
For the Meringue
- 4 egg whites
- 2 tbsp honey (or another sweetener)
- Pinch of salt
๐ช Instructions
1. Make the Crust
- Preheat oven to 175ยฐC (350ยฐF).
- Mix oat flour + protein powder + coconut oil + honey until crumbly but holds together.
- Press into a 9-inch pie pan.
- Bake 10โ12 minutes until lightly golden. Let cool.
2. Prepare the Lemon Filling
- In a small saucepan, whisk egg yolks, lemon juice, honey, Greek yogurt, and cornstarch.
- Heat gently over medium heat, stirring constantly until thickened (like pudding).
- Pour filling into the baked crust.
3. Make the Meringue
- Beat egg whites + pinch of salt until soft peaks form.
- Gradually add honey while continuing to beat until stiff peaks form.
4. Assemble & Bake
- Spread meringue over lemon filling, sealing edges.
- Bake 10โ12 minutes at 175ยฐC (350ยฐF) until meringue is lightly golden.
- Cool at room temperature, then chill 1โ2 hours before serving.
