Filling

  • 1 cup Greek yogurt (thick, strained)
  • 1 cup cottage cheese (blended smooth)
  • 2โ€“3 tbsp honey or sweetener of choice
  • 1 tsp vanilla extract

Strawberries

  • 3 cups fresh strawberries, hulled and sliced
  • Optional: 1 tsp lemon juice (brightens flavor)

Topping (Optional)

  • 2 tbsp chopped pistachios or almonds
  • Mint leaves for garnish

1. Prepare the crust

  1. Mix almond flour + protein powder + melted coconut oil + honey.
  2. Press mixture evenly into the bottom of a 9-inch pie pan.
  3. Refrigerate for 10โ€“15 minutes to set.

2. Make the filling

  1. Blend cottage cheese until smooth.
  2. Mix with Greek yogurt, honey, and vanilla extract.
  3. Spread evenly over the chilled crust.

3. Add strawberries

  1. Arrange sliced strawberries on top of the filling in a decorative pattern.
  2. Optional: drizzle with lemon juice or a small amount of honey.

4. Chill

  • Refrigerate pie for at least 1โ€“2 hours before serving to firm up.
