Crust (Protein-Boosted, No-Bake Option)
- 1 cup almond flour
- 2 tbsp vanilla protein powder
- 2 tbsp melted coconut oil or butter
- 1โ2 tbsp honey or maple syrup
Filling
- 1 cup Greek yogurt (thick, strained)
- 1 cup cottage cheese (blended smooth)
- 2โ3 tbsp honey or sweetener of choice
- 1 tsp vanilla extract
Strawberries
- 3 cups fresh strawberries, hulled and sliced
- Optional: 1 tsp lemon juice (brightens flavor)
Topping (Optional)
- 2 tbsp chopped pistachios or almonds
- Mint leaves for garnish
๐ฅ Instructions
1. Prepare the crust
- Mix almond flour + protein powder + melted coconut oil + honey.
- Press mixture evenly into the bottom of a 9-inch pie pan.
- Refrigerate for 10โ15 minutes to set.
2. Make the filling
- Blend cottage cheese until smooth.
- Mix with Greek yogurt, honey, and vanilla extract.
- Spread evenly over the chilled crust.
3. Add strawberries
- Arrange sliced strawberries on top of the filling in a decorative pattern.
- Optional: drizzle with lemon juice or a small amount of honey.
4. Chill
- Refrigerate pie for at least 1โ2 hours before serving to firm up.
5. Serve
- Garnish with chopped pistachios or almonds and fresh mint leaves.
- Slice and enjoy as a high-protein dessert or snack.
