Protein Filling

  • 1 cup nonfat Greek yogurt (or high-protein yogurt like Oikos Pro)
  • Β½ cup blended cottage cheese (for creaminess + protein)
  • Β½ cup vanilla whey or casein protein powder
  • 2–3 tbsp sugar-free maple syrup or honey
  • Β½ tsp vanilla extract
  • Zest of Β½ lemon (optional but AMAZING)

Blueberries

  • ΒΎ cup fresh blueberries
  • OR 1 cup frozen blueberries, thawed & patted dry
  • Optional: 1–2 tbsp freeze-dried blueberry powder for extra color/flavor

Crunch Layer (optional but delicious)

  • ΒΎ cup granola or high-protein cereal
  • 1–2 tbsp almond butter or peanut butter
  • 1 tbsp honey or maple syrup

Coating (optional)

  • Β½ cup white chocolate chips or sugar-free white chocolate
  • 1 tsp coconut oil

OPTION A β€” SIMPLE NO-COATING BITES (easiest)

  1. Mix filling:
    In a bowl, combine
    βœ” Greek yogurt
    βœ” blended cottage cheese
    βœ” protein powder
    βœ” sweetener
    βœ” vanilla + lemon zest
    Stir until smooth and thick.
  2. Fold in blueberries gently.
  3. Scoop into silicone molds, mini muffin cups, or onto a parchment-lined tray (spoonful β€œclusters”).
  4. Freeze 1–2 hours until firm.
  5. Pop out and store in a freezer bag.

OPTION B β€” WITH A CRUNCHY BASE

  1. Mix granola/cereal with almond butter + honey until sticky.
  2. Press ~1 teaspoon into the bottom of each silicone mold or mini liner.
  3. Add the protein yogurt mixture on top.
  4. Freeze 1–2 hours.

This makes them taste like high-protein cheesecake bites.


OPTION C β€” COATED IN WHITE CHOCOLATE (dessert version)

  1. Freeze bites until VERY firm.
  2. Melt white chocolate + coconut oil in 20–30 second intervals.
  3. Dip each frozen bite into melted white chocolate.
  4. Place on parchment and freeze 10 minutes to harden.

This turns them into a high-protein ice-cream truffle!
