🥣 Ingredients (makes 8 muffins)
- 1 cup oat flour (or whole wheat flour for more fiber)
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp cinnamon (optional)
- 2 large eggs
- ½ cup Greek yogurt (high-protein and moist)
- ¼ cup milk (dairy or plant-based)
- 2 tbsp honey or maple syrup (optional for sweetness)
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
👩🍳 Instructions
- Preheat oven
To 180°C (350°F). Line a muffin tin with paper liners or grease lightly. - Mix dry ingredients
In a large bowl, combine oat flour, protein powder, baking powder, baking soda, salt, and cinnamon. - Mix wet ingredients
In another bowl, whisk eggs, Greek yogurt, milk, honey, and vanilla until smooth. - Combine
Fold wet ingredients into dry ingredients until just combined.
Gently fold in blueberries. - Fill muffin tin
Divide batter evenly into 8 muffin cups. - Bake
Bake 18–22 minutes until golden and a toothpick comes out clean. - Cool & enjoy
Let muffins cool 5 minutes in pan, then transfer to a wire rack.
