🫐 High-Protein Blueberry Muffins

🥣 Ingredients (makes 8 muffins)

  • 1 cup oat flour (or whole wheat flour for more fiber)
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon (optional)
  • 2 large eggs
  • ½ cup Greek yogurt (high-protein and moist)
  • ¼ cup milk (dairy or plant-based)
  • 2 tbsp honey or maple syrup (optional for sweetness)
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

👩‍🍳 Instructions

  1. Preheat oven
    To 180°C (350°F). Line a muffin tin with paper liners or grease lightly.
  2. Mix dry ingredients
    In a large bowl, combine oat flour, protein powder, baking powder, baking soda, salt, and cinnamon.
  3. Mix wet ingredients
    In another bowl, whisk eggs, Greek yogurt, milk, honey, and vanilla until smooth.
  4. Combine
    Fold wet ingredients into dry ingredients until just combined.
    Gently fold in blueberries.
  5. Fill muffin tin
    Divide batter evenly into 8 muffin cups.
  6. Bake
    Bake 18–22 minutes until golden and a toothpick comes out clean.
  7. Cool & enjoy
    Let muffins cool 5 minutes in pan, then transfer to a wire rack.

  • ~12–15g protein per muffin (depending on protein powder and Greek yogurt used)
