Ingredients
- 2 cups cottage cheese
- 3 large eggs
- 2 cups frozen mixed veggies peas, carrots, corn, or your favorite blend
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil for greasing the pan
Instructions
- Preheat oven to 375°F (190°C).
- Grease a baking dish with olive oil.
- In a bowl, mix cottage cheese, eggs, garlic powder, onion powder, salt, and pepper.
- Add frozen mixed veggies and shredded cheddar cheese. Stir well.
- Pour the mixture into the baking dish.
- Bake for 30-35 minutes or until set and golden on top.
- Let cool for 5 minutes before slicing.
Notes
- Use fresh veggies if preferred.
- Substitute cheddar with any cheese of your choice.
- Store leftovers in the fridge for up to 3 days.
