Healthy Oatmeal Greek Yogurt Pancake Recipe

Ingredients:
- 1 cup old-fashioned oats
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup non-fat Greek yogurt
- 1/2 cup milk (you can use any type of milk, such as almond or skim milk)
- 1 large egg
- 1 tablespoon honey or maple syrup (optional, or adjust to taste)
- 1 teaspoon vanilla extract
- Cooking spray or a small amount of oil for greasing the pan
Instructions:
- Place the oats in a blender or food processor and pulse until they reach a flour-like consistency.
- In a large mixing bowl, combine the oat flour, whole wheat flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the Greek yogurt, milk, egg, honey or maple syrup (if using), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for about 5 minutes.
- Heat a griddle or non-stick skillet over medium heat. Lightly coat the surface with cooking spray or a small amount of oil.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set.
- Flip the pancakes with a spatula and cook until the other side is golden brown.
- Remove the pancakes from the griddle and repeat the process with the remaining batter.
- Serve the pancakes with fresh fruit, a drizzle of honey or maple syrup, or a dollop of Greek yogurt.
