Healthy Oatmeal Greek Yogurt Pancake Recipe

Ingredients:

  • 1 cup old-fashioned oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup non-fat Greek yogurt
  • 1/2 cup milk (you can use any type of milk, such as almond or skim milk)
  • 1 large egg
  • 1 tablespoon honey or maple syrup (optional, or adjust to taste)
  • 1 teaspoon vanilla extract
  • Cooking spray or a small amount of oil for greasing the pan

Instructions:

  1. Place the oats in a blender or food processor and pulse until they reach a flour-like consistency.
  2. In a large mixing bowl, combine the oat flour, whole wheat flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the Greek yogurt, milk, egg, honey or maple syrup (if using), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for about 5 minutes.
  5. Heat a griddle or non-stick skillet over medium heat. Lightly coat the surface with cooking spray or a small amount of oil.
  6. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set.
  7. Flip the pancakes with a spatula and cook until the other side is golden brown.
  8. Remove the pancakes from the griddle and repeat the process with the remaining batter.
  9. Serve the pancakes with fresh fruit, a drizzle of honey or maple syrup, or a dollop of Greek yogurt.
