Healthy Apple-Carrot Oat Pancakes (Flourless & Sugar-Free)

Ingredients:

 1 cup rolled oats (or oat flour)
 1 medium apple (grated)
 1 small carrot (grated)
 2 eggs (or flax eggs for vegan)
 ½ cup milk (dairy or plant-based)
 1 tsp cinnamon
 ½ tsp baking powder

Baking supplies

 ½ tsp vanilla extract

 1 tbsp ground flaxseeds (optional, for extra fiber)

 1 tbsp coconut oil (for cooking)

Instructions:

 Blend oats into flour using a blender (if not using pre-ground oat flour).
 In a bowl, mix grated apple, grated carrot, eggs, milk, vanilla, and cinnamon.
 Stir in oat flour, baking powder, and flaxseeds until combined.

 Heat a non-stick pan with coconut oil over medium heat.
 Pour small amounts of batter onto the pan, forming pancakes.
 Cook for 2-3 minutes per side until golden brown.
 Serve warm with yogurt, nut butter, or fresh fruit!

 Tips:

  • For extra sweetness, add mashed banana or a few chopped dates.
  • Make them protein-rich by adding a scoop of protein powder.
