2 cups cooked jasmine rice (preferably cold)
1 lb chicken breast (diced into small pieces)
3 tablespoons vegetable oil
4 cloves garlic (minced)
1 medium onion (diced)
1 cup frozen peas and carrots (thawed)
2 large eggs (beaten)
3 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
Salt and pepper (to taste)
Green onions (chopped, for garnish)
Instructions:
Prep the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the diced chicken and cook until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.
