🍗🍚 Garlic Chicken Fried Rice: A flavorful twist on a classic dish! Tender chicken 🍗, fragrant garlic, and fluffy rice 🍚 stir-fried to perfection.

Ingredients:

  • 2 cups cooked jasmine rice (preferably cold)
  • 1 lb chicken breast (diced into small pieces)
  • 3 tablespoons vegetable oil
  • 4 cloves garlic (minced)
  • 1 medium onion (diced)
  • 1 cup frozen peas and carrots (thawed)
  • 2 large eggs (beaten)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper (to taste)
  • Green onions (chopped, for garnish)

Instructions:

  1. Prep the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the diced chicken and cook until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.
  2. Cook the Aromatics:
    • In the same skillet, add another tablespoon of vegetable oil.
    • Add the minced garlic and diced onion. Sauté until the onion is translucent and the garlic is fragrant.
  3. Add Vegetables:
    • Add the thawed peas and carrots to the skillet. Stir-fry for a few minutes until they are heated through.
  4. Scramble the Eggs:
    • Push the vegetables to one side of the skillet and add the beaten eggs to the other side.
    • Scramble the eggs until cooked, then mix them with the vegetables.
  5. Combine and Stir-Fry:
    • Add the cold, cooked rice to the skillet. Break up any clumps of rice with a spatula and mix well with the vegetables and eggs.
    • Return the cooked chicken to the skillet.
  6. Season the Rice:
    • Add the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine all the ingredients and evenly distribute the sauce.
    • Season with salt and pepper to taste.
  7. Garnish and Serve:
    • Garnish with chopped green onions.
    • Serve hot and enjoy!
