🍗🍚 Garlic Chicken Fried Rice: A flavorful twist on a classic dish! Tender chicken 🍗, fragrant garlic, and fluffy rice 🍚 stir-fried to perfection.
Ingredients:
- 2 cups cooked jasmine rice (preferably cold)
- 1 lb chicken breast (diced into small pieces)
- 3 tablespoons vegetable oil
- 4 cloves garlic (minced)
- 1 medium onion (diced)
- 1 cup frozen peas and carrots (thawed)
- 2 large eggs (beaten)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper (to taste)
- Green onions (chopped, for garnish)
Instructions:
- Prep the Chicken:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken and cook until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.
- Cook the Aromatics:
- In the same skillet, add another tablespoon of vegetable oil.
- Add the minced garlic and diced onion. Sauté until the onion is translucent and the garlic is fragrant.
- Add Vegetables:
- Add the thawed peas and carrots to the skillet. Stir-fry for a few minutes until they are heated through.
- Scramble the Eggs:
- Push the vegetables to one side of the skillet and add the beaten eggs to the other side.
- Scramble the eggs until cooked, then mix them with the vegetables.
- Combine and Stir-Fry:
- Add the cold, cooked rice to the skillet. Break up any clumps of rice with a spatula and mix well with the vegetables and eggs.
- Return the cooked chicken to the skillet.
- Season the Rice:
- Add the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine all the ingredients and evenly distribute the sauce.
- Season with salt and pepper to taste.
- Garnish and Serve:
- Garnish with chopped green onions.
- Serve hot and enjoy!
