FRIED OYSTER MUSHROOMS WITH SRIRACHA MAYO DIP
Ingredients:
For the fried oyster mushrooms:
- 1 lb oyster mushrooms, cleaned and sliced
- 1 cup all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup plant-based milk (such as soy or almond milk)
- 1 tbsp apple cider vinegar
- 1 cup panko breadcrumbs
- 1/2 cup vegetable oil
For the Sriracha mayo dip:
- 1/2 cup vegan mayonnaise
- 1 tbsp Sriracha sauce
- 1 tsp lemon juice
- Salt and black pepper to taste
Instructions:
- In a bowl, mix together the flour, paprika, garlic powder, salt, and black pepper. In a separate bowl, mix together the plant-based milk and apple cider vinegar to create a vegan buttermilk.
- Dip each slice of oyster mushroom into the flour mixture, then into the vegan buttermilk, and finally coat it with the panko breadcrumbs.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded oyster mushrooms to the skillet and fry until golden brown, about 3-4 minutes per side.
- Remove the fried oyster mushrooms from the skillet and place them on a paper towel-lined plate to remove any excess oil.
- In a small bowl, mix together the vegan mayonnaise, Sriracha sauce, lemon juice, salt, and black pepper to create the Sriracha mayo dip.
- Serve the fried oyster mushrooms hot with the Sriracha mayo dip on the side.
