FRIED OYSTER MUSHROOMS WITH SRIRACHA MAYO DIP

Ingredients:

For the fried oyster mushrooms:

  • 1 lb oyster mushrooms, cleaned and sliced
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup plant-based milk (such as soy or almond milk)
  • 1 tbsp apple cider vinegar
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil

For the Sriracha mayo dip:

  • 1/2 cup vegan mayonnaise
  • 1 tbsp Sriracha sauce
  • 1 tsp lemon juice
  • Salt and black pepper to taste

Instructions:

  1. In a bowl, mix together the flour, paprika, garlic powder, salt, and black pepper. In a separate bowl, mix together the plant-based milk and apple cider vinegar to create a vegan buttermilk.
  2. Dip each slice of oyster mushroom into the flour mixture, then into the vegan buttermilk, and finally coat it with the panko breadcrumbs.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded oyster mushrooms to the skillet and fry until golden brown, about 3-4 minutes per side.
  4. Remove the fried oyster mushrooms from the skillet and place them on a paper towel-lined plate to remove any excess oil.
  5. In a small bowl, mix together the vegan mayonnaise, Sriracha sauce, lemon juice, salt, and black pepper to create the Sriracha mayo dip.
  6. Serve the fried oyster mushrooms hot with the Sriracha mayo dip on the side.
