Fried Avocado & Grits

Ingredients:
1 avocado, sliced
½ cup flour, ½ cup plant milk, 1 cup breadcrumbs
1 cup grits
2 cups water or plant milk
Salt, pepper, vegan butter
Hot sauce & vegan mayo (optional)
Instructions:
Cook grits with water/milk, season with salt, pepper & butter.
Coat avocado slices in flour, dip in milk, then breadcrumbs. Fry until crispy.
spicy Mayo. I cook the grits in coconut milk mixed with a little water, gives it a slight coconut flavor but you can sub that for a nut or oat milk, once it’s done I mix in some plant butter and season with salt and pepper. Serve fried avocado over grits, drizzle with sauces. Enjoy! 🌱🔥
