French Onion Chicken Bake

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 packet (about 1 ounce) of dry French onion soup mix
- 1 cup fat-free plain Greek yogurt
- 1 cup reduced-fat shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the Greek yogurt, dry French onion soup mix, olive oil, dried thyme, salt, and pepper.
- Place the chicken breasts in a baking dish.
- Spread the yogurt mixture evenly over the chicken breasts.
- Sprinkle the shredded mozzarella cheese on top of the yogurt mixture.
- Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through, and the cheese is melted and bubbly.
- If desired, broil for an additional 2-3 minutes to brown the cheese.
- Garnish with chopped fresh parsley before serving.
