French Onion Chicken Bake

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 packet (about 1 ounce) of dry French onion soup mix
  • 1 cup fat-free plain Greek yogurt
  • 1 cup reduced-fat shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the Greek yogurt, dry French onion soup mix, olive oil, dried thyme, salt, and pepper.
  3. Place the chicken breasts in a baking dish.
  4. Spread the yogurt mixture evenly over the chicken breasts.
  5. Sprinkle the shredded mozzarella cheese on top of the yogurt mixture.
  6. Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through, and the cheese is melted and bubbly.
  7. If desired, broil for an additional 2-3 minutes to brown the cheese.
  8. Garnish with chopped fresh parsley before serving.
