β Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- Β½ tsp salt
- 4 large eggs, room temperature
- ΒΎ cup milk, room temperature
- Β½ cup (1 stick) unsalted butter, melted (or neutral oil)
- 1 tbsp vanilla extract
- Optional: 2 tbsp cornstarch (for extra softness)

1. Preheat and Prepare Pans
- Preheat oven to 350Β°F (175Β°C).
- Grease and line one 8-inch round cake pan (or two for layers) with parchment paper.
2. Mix Dry Ingredients
In a large bowl, sift together:
- 2 cups flour
- 1 tbsp baking powder
- Β½ tsp salt
(Add cornstarch here if using)
3. Beat Eggs and Sugar
In a separate bowl, beat:
- 4 eggs + 1 cup sugar
- Use a hand or stand mixer on high for 4β5 minutes until pale, thick, and fluffy.
This step is key for a light sponge texture.
4. Add Wet Ingredients
Gently mix in:
- ΒΎ cup milk
- Β½ cup melted butter (or oil)
- 1 tbsp vanilla extract
Do this slowly, folding gently so you donβt deflate the eggs.
5. Combine Wet & Dry
- Add dry ingredients to wet mixture in batches, gently folding with a spatula until just combined.
- Donβt overmix β stop as soon as there are no dry flour pockets.
6. Bake

- Tap the pan on the counter once to remove air bubbles.

7. Cool
- Let cake cool in pan for 10 minutes.
