Flourless Cottage Cheese Pancakes

Ingredients**

– **1 cup cottage cheese** (preferably full-fat for creaminess)

– **2 large eggs**

– **¼ cup rolled oats** *(optional, for added texture)*

– **½ teaspoon baking powder**

– **¼ teaspoon vanilla extract**

– **Pinch of salt**

– **1 teaspoon honey or maple syrup** *(optional, for a natural sweetness)*

– **½ teaspoon ground cinnamon** *(for a warm Mediterranean touch)*

– **1 teaspoon olive oil** *(for cooking, or use butter)*

#### **Toppings (Optional, for a Mediterranean Twist)**

– Fresh berries (strawberries, blueberries, or figs)

– A drizzle of honey or date syrup

– A dollop of Greek yogurt

– Chopped nuts (walnuts or almonds)

#### **Instructions**

1. **Blend the Batter** – In a blender or food processor, combine **cottage cheese, eggs, oats (if using), baking powder, vanilla, salt, honey, and cinnamon**. Blend until smooth. Let the batter rest for 5 minutes.

2. **Heat the Pan** – Heat a non-stick skillet over **medium heat** and brush with **olive oil or butter**.

3. **Cook the Pancakes** – Pour small amounts of batter onto the skillet (about **2 tablespoons per pancake**). Cook for **2-3 minutes**, until bubbles form. Flip and cook for another **1-2 minutes** until golden.

4. **Serve & Enjoy** – Stack the pancakes and top with **Greek yogurt, honey, fresh berries, and nuts** for a true Mediterranean experience.
