Elvis Presley Favorite Cake

Ingredients
- 1 box White Cake mix, your choice of brands
- Ingredients listed on box to make the cake
- 1 can Pineapple, crushed
- 1 cup granulated sugar
- 8 ounces Cream Cheese, softened
- ½ cup butter, unsalted
- 1 tsp Vanilla Extract
- 3 cups Confectioners sugar
- 2 cups Pecans, crushed
Instructions
FIRST STEP:
Preheat the oven to the temperature listed on the cake mix box
Prepare the cake as directed on the back of the box
Spray an 11x 7 baking pan with non-stick spray
Bake the cake in this pan until a toothpick comes out clean
Set to the side to cool slightly
SECOND STEP:
After 5 minutes, poke holes in the cake using the handle of a wooden spoon, about ½ inch apart
Place the pineapple with the juice and 1 cup of granulated sugar in a pan over medium heat and bring to a boil
Pour this mixture over the top of the cake
Set the cake to the side to cool
THIRD STEP:
In a medium sized bowl, combine the cream cheese, butter and the Confectioners Sugar
Use a spatula to fold in the crushed pecans and the vanilla
Using a spatula that is offset, spread the frosting over the top of the cake
