Effortless Lemon Ice Cream

Ingredients:

  • 1 cup heavy cream
  • 1 cup sweetened condensed milk
  • 1/2 cup fresh lemon juice (about 2-3 lemons)
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Ingredients:
    • Zest and juice the lemons. Ensure you have 1/2 cup of lemon juice and 1 tablespoon of zest.
  2. Whip the Cream:
    • In a large bowl, use an electric mixer to whip the heavy cream until stiff peaks form. This will take about 2-3 minutes.
  3. Combine Other Ingredients:
    • In another bowl, mix the sweetened condensed milk, lemon juice, lemon zest, vanilla extract, and a pinch of salt until well combined.
  4. Fold Ingredients Together:
    • Gently fold the whipped cream into the lemon mixture. Do this carefully to maintain the airiness of the whipped cream.
  5. Freeze:
    • Pour the mixture into a loaf pan or any freezer-safe container. Cover with plastic wrap or a lid.
  6. Chill:
    • Freeze for at least 4 hours, or until the ice cream is firm.
  7. Serve:
    • Scoop the ice cream into bowls or cones, and enjoy!

Tips:

  • For extra flavor, you can add a few drops of lemon extract.
  • If you like a bit of texture, consider adding small lemon candy pieces or white chocolate chips.
