Effortless Lemon Ice Cream
Ingredients:
- 1 cup heavy cream
- 1 cup sweetened condensed milk
- 1/2 cup fresh lemon juice (about 2-3 lemons)
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Prepare the Ingredients:
- Zest and juice the lemons. Ensure you have 1/2 cup of lemon juice and 1 tablespoon of zest.
- Whip the Cream:
- In a large bowl, use an electric mixer to whip the heavy cream until stiff peaks form. This will take about 2-3 minutes.
- Combine Other Ingredients:
- In another bowl, mix the sweetened condensed milk, lemon juice, lemon zest, vanilla extract, and a pinch of salt until well combined.
- Fold Ingredients Together:
- Gently fold the whipped cream into the lemon mixture. Do this carefully to maintain the airiness of the whipped cream.
- Freeze:
- Pour the mixture into a loaf pan or any freezer-safe container. Cover with plastic wrap or a lid.
- Chill:
- Freeze for at least 4 hours, or until the ice cream is firm.
- Serve:
- Scoop the ice cream into bowls or cones, and enjoy!
