Ingredients
- 1 cup unsweetened peanut butter (chunky or smooth)
- 1/2 cup salted peanuts (or mixed nuts)
- 1/3 cup sugar-free chocolate chips
- 1 tablespoon coconut oil
- 1/2 teaspoon vanilla extract (optional)
- Sea salt (for sprinkling, optional)
Instructions
- Prepare a baking tray: Line a tray or plate with parchment paper or wax paper.
- Melt the chocolate:
- In a microwave-safe bowl, combine the sugar-free chocolate chips and coconut oil.
- Microwave on high for 30-second intervals, stirring between each, until fully melted and smooth (usually takes 1 to 1.5 minutes).
- Mix in the peanut butter:
- Stir the peanut butter into the melted chocolate mixture until well combined.
- Add the peanuts:
- Fold the peanuts into the mixture, making sure they are evenly coated.
- Form the clusters:
- Scoop small spoonfuls of the mixture onto the prepared parchment paper. You can make them as large or small as you prefer.
- Chill:
- Place the tray in the refrigerator or freezer for about 20-30 minutes until the clusters are firm.
- Optional garnish:
- Sprinkle a little sea salt on top before the clusters set for an extra flavor boost.
Storage
Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to a month.
