Easy Microwave Keto Peanut Clusters

Ingredients

  • 1 cup unsweetened peanut butter (chunky or smooth)
  • 1/2 cup salted peanuts (or mixed nuts)
  • 1/3 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract (optional)
  • Sea salt (for sprinkling, optional)

Instructions

  1. Prepare a baking tray: Line a tray or plate with parchment paper or wax paper.
  2. Melt the chocolate:
    • In a microwave-safe bowl, combine the sugar-free chocolate chips and coconut oil.
    • Microwave on high for 30-second intervals, stirring between each, until fully melted and smooth (usually takes 1 to 1.5 minutes).
  3. Mix in the peanut butter:
    • Stir the peanut butter into the melted chocolate mixture until well combined.
  4. Add the peanuts:
    • Fold the peanuts into the mixture, making sure they are evenly coated.
  5. Form the clusters:
    • Scoop small spoonfuls of the mixture onto the prepared parchment paper. You can make them as large or small as you prefer.
  6. Chill:
    • Place the tray in the refrigerator or freezer for about 20-30 minutes until the clusters are firm.
  7. Optional garnish:
    • Sprinkle a little sea salt on top before the clusters set for an extra flavor boost.

Storage

Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to a month.
