EASY CABBAGE SOUP ADVERTISEMENT

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 1 small head cabbage, chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth (low-sodium)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 bay leaf
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add diced onion, sliced carrots, and minced garlic. Sauté until the vegetables are softened.
  2. Add the chopped cabbage to the pot and cook for a few minutes until it starts to wilt.
  3. Pour in the diced tomatoes (with their juice) and stir.
  4. Add the vegetable or chicken broth to the pot. Stir in dried thyme, dried oregano, salt, pepper, and the bay leaf.
  5. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes or until the vegetables are tender.
  6. Adjust the seasoning if necessary and discard the bay leaf.
  7. Ladle the Easy Cabbage Soup into bowls, garnish with fresh parsley if desired, and serve
