EASY CABBAGE SOUP ADVERTISEMENT
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 3 cloves garlic, minced
- 1 small head cabbage, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable or chicken broth (low-sodium)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 bay leaf
- Fresh parsley for garnish (optional)
Instructions:
- In a large pot, heat olive oil over medium heat. Add diced onion, sliced carrots, and minced garlic. Sauté until the vegetables are softened.
- Add the chopped cabbage to the pot and cook for a few minutes until it starts to wilt.
- Pour in the diced tomatoes (with their juice) and stir.
- Add the vegetable or chicken broth to the pot. Stir in dried thyme, dried oregano, salt, pepper, and the bay leaf.
- Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes or until the vegetables are tender.
- Adjust the seasoning if necessary and discard the bay leaf.
- Ladle the Easy Cabbage Soup into bowls, garnish with fresh parsley if desired, and serve
