Easy Burrito Casserole

Ingredients

  • 3 8-inch flour tortillas
  • 1 pound lean ground beef
  • 1/2 onion, finely chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 15 oz can black beans, drained and rinsed
  • 1 10 oz can diced tomatoes with green chiles
  • 1/2 cup sour cream
  • 2 cups shredded Mexican cheese blend

Instructions

Step 1: Preheat the Oven

  1. Preheat Oven: Preheat your oven to 350°F (175°C).

Step 2: Cook the Beef

  1. Cook Ground Beef: In a large skillet over medium heat, cook the 1 pound of lean ground beef and 1/2 finely chopped onion until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  2. Add Seasoning: Stir in the packet of taco seasoning and 1/2 cup of water. Let it simmer for about 5 minutes until the mixture thickens.

Step 3: Combine Ingredients

  1. Add Beans and Tomatoes: Add the 15 oz can of drained and rinsed black beans and the 10 oz can of diced tomatoes with green chiles to the beef mixture. Stir well to combine and let it cook for another 2-3 minutes.

Step 4: Assemble the Casserole

  1. Layer Tortillas: In a 9×13-inch baking dish, place one of the 8-inch flour tortillas at the bottom.
  2. Add Beef Mixture: Spread a third of the beef mixture over the tortilla.
  3. Add Sour Cream and Cheese: Spread 2 tablespoons of sour cream over the beef mixture and sprinkle 1/2 cup of the shredded Mexican cheese blend on top.
  4. Repeat Layers: Repeat the layers two more times with the remaining tortillas, beef mixture, sour cream, and cheese. Ensure that the final layer is covered with a generous amount of cheese.

Step 5: Bake the Casserole

  1. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.

Step 6: Serve

  1. Serve: Remove the casserole from the oven and let it sit for a few minutes before slicing. Serve warm with your favorite toppings such as chopped cilantro, avocado slices, or a dollop of extra sour cream.
