Easy Blended Baked Oats

These Easy Blended Baked Oats are inspired by a Tiktok viral recipe- and are worth the hype! If you are sick and tired of the same old breakfast- you are going to love these baked oats- packed with fiber and made with simple staple pantry ingredients!!

Ingredients

  • 1/2 cup rolled oats or quick oats. I like to use Trader Joe’s old fashioned rolled toasted oats 
  • 1/4 cup unsweetened almond or skim milk 
  • 1/4 cup mashed very ripe banana,  about 1/2 banana. You can substitute that banana with 1/4 cup unsweetened applesauce sauce or pumpkin purée 
  • 1/4 tsp baking powder
  • Pinch of salt
  • Pinch of ground cinnamon
  • 1/2 tsp pure vanilla extract
  • 1 Tbsp zero point white granulated sugar sweetener, you could substitute this for honey, or ChocZero sugar free syrup, for additional points. I like to use Lakanto Monkfruit baking sweetener.
  • 7 chocolate chips sugar free chocolate chips, such as Lily’s or ChocZero no sugar added milk chocolate chips.
  • 1 Tbsp unsweetened cocoa powder, optional-point value is the same if you use 1 Tbsp.

Instructions

  1. Preheat oven to 350 degrees. Spray a 8 oz. oven safe oven-safe ramekin or dish with non stick cooking spray.
  2. Combine all of the ingredients in the food processor or blender (except for the sugar free chocolate chips and peanut butter, if you’re using PB). 
  3. Blend for 30 seconds until smooth. 
  4. Pour into a the prepared 8 oz. oven safe oven-safe ramekin or dish.  Top with the sugar free chocolate chips.
  5. Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean.  Remove from the oven, drizzle with your favorites toppings.

    Makes 1 serving

Notes

Optional Toppings:

  • Toasted or unsweetened coconut 
  • Chopped pecans
  • Sugar free caramel sauce 
  • Sugar free chocolate sauce 
  • Fat free cool whip 
  • Berries: top with of your favorite berries such as raspberries, strawberries, blueberries 
  • Drizzle with melted peanut butter 

What variations can I use with this recipe? 

Chocolate: add 1 Tbsp of unsweetened cocoa powder in the batter with the other ingredients. 
Peanut Butter and Jelly: add 1/2 Tbsp peanut butter in the middle of the batter and 1 tsp sugar free strawberry jelly. 
Preserves: add your favorite sugar free jelly such as Strawberry, Apricot, or Red Raspberry.
Funfetti: top the batter with your favorite sprinkles!! 

Smartpoints: GREEN/BLUE: 5 smartpoints per serving PURPLE: Zero smartpoint per serving if you do NOT blend the oats or 5 smartpoints per serving 

Point value does not include optional toppings. Point value includes using 7 sugar free chocolate chips on top of the oat batter.
