EASY BAKED COD WITH LEMON AND GARLIC
Ingredients:
- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
- Place the cod fillets in the prepared baking dish.
- In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper.
- Pour the lemon-garlic mixture over the cod fillets, ensuring they are evenly coated.
- Bake in the preheated oven for about 15-20 minutes or until the cod is cooked through and flakes easily with a fork.
- Optional: If you prefer a slightly crispy top, you can broil the cod for an additional 2-3 minutes, watching closely to avoid burning.
- Remove from the oven and garnish with chopped fresh parsley.
- Serve the baked cod with your favorite side dishes, such as steamed vegetables or a light salad.
