EASY BAKED COD WITH LEMON AND GARLIC 

Ingredients:

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
  2. Place the cod fillets in the prepared baking dish.
  3. In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper.
  4. Pour the lemon-garlic mixture over the cod fillets, ensuring they are evenly coated.
  5. Bake in the preheated oven for about 15-20 minutes or until the cod is cooked through and flakes easily with a fork.
  6. Optional: If you prefer a slightly crispy top, you can broil the cod for an additional 2-3 minutes, watching closely to avoid burning.
  7. Remove from the oven and garnish with chopped fresh parsley.
  8. Serve the baked cod with your favorite side dishes, such as steamed vegetables or a light salad.
