Diabetic-Friendly Vanilla Loaf Cake

๐ Ingredients (1 small loaf)
- 1ยฝ cups almond flour
(or 1 cup whole-wheat flour if almond flour isnโt available) - 3 large eggs
- ยฝ cup unsweetened Greek yogurt
- โ cup erythritol or monk-fruit sweetener (powdered)
- ยผ cup olive oil or melted butter
- 1 tsp vanilla essence
- 1ยฝ tsp baking powder
- ยผ tsp salt
- (Optional) Zest of ยฝ lemon or orange
๐ฉโ๐ณ Instructions
- Preheat oven to 170ยฐC (340ยฐF).
- Line a loaf pan with parchment paper.
- In a bowl, whisk eggs and sweetener until light.
- Add yogurt, oil/butter, and vanilla. Mix well.
- In another bowl, mix flour, baking powder, and salt.
- Slowly fold dry ingredients into wet mixture.
- Pour batter into loaf pan.
- Bake for 35โ40 minutes, until a toothpick comes out clean.
- Cool completely before slicing.
