Diabetic-Friendly Vanilla Loaf Cake

🛒 Ingredients (1 small loaf)
- 1½ cups almond flour
(or 1 cup whole-wheat flour if almond flour isn’t available) - 3 large eggs
- ½ cup unsweetened Greek yogurt
- ⅓ cup erythritol or monk-fruit sweetener (powdered)
- ¼ cup olive oil or melted butter
- 1 tsp vanilla essence
- 1½ tsp baking powder
- ¼ tsp salt
- (Optional) Zest of ½ lemon or orange
👩🍳 Instructions
- Preheat oven to 170°C (340°F).
- Line a loaf pan with parchment paper.
- In a bowl, whisk eggs and sweetener until light.
- Add yogurt, oil/butter, and vanilla. Mix well.
- In another bowl, mix flour, baking powder, and salt.
- Slowly fold dry ingredients into wet mixture.
- Pour batter into loaf pan.
- Bake for 35–40 minutes, until a toothpick comes out clean.
- Cool completely before slicing.
