Diabetic-Friendly Beef & Veggie Casserole (Low-Carb)

- 500g lean ground beef
- 1 medium onion (chopped)
- 1 bell pepper (chopped)
- 1 cup mushrooms (chopped)
- 1 small zucchini (cubed)
- 1 cup cauliflower florets (small pieces)
- 1 tbsp olive oil
- 1 tsp garlic (minced)
- 1 tsp black pepper
- 1 tsp paprika
- ยฝ tsp salt
- 1 cup shredded low-fat mozzarella or cheddar
- 2 tbsp fresh parsley (optional)
๐ Replace potatoes with cauliflower + zucchini to reduce carbs.

- Preheat oven to 180ยฐC (350ยฐF).
- Heat olive oil in a pan. Add onion and garlic, sautรฉ 2โ3 minutes.
- Add ground beef. Cook until browned.
- Add mushrooms, zucchini, cauliflower, and bell pepper. Cook 5 minutes.
- Add salt, pepper, and paprika. Mix well.
- Transfer mixture to a baking dish.
- Sprinkle cheese evenly on top.
- Bake 15โ20 minutes until cheese melts and slightly browns.
- Garnish with parsley.
