Ingredients

  • 3โ€“4 medium beets, cooked and sliced
  • 1 cup apple cider vinegar
  • ยฝ cup water
  • 1โ€“2 tbsp erythritol or monk fruit sweetener (adjust to taste)
  • ยฝ tsp salt
  • ยฝ tsp black peppercorns
  • 2โ€“3 whole cloves (optional)
  • 1 small bay leaf
  • Optional: sliced onion for extra flavor

Instructions

  1. Cook the beets
    Boil or roast until tender, then peel and slice.
  2. Make the brine
    In a saucepan, combine vinegar, water, sweetener, salt, and spices. Heat until dissolved (no need to boil hard).
  3. Jar it up
    Place beets in a clean jar and pour the hot brine over them.
  4. Cool & refrigerate
    Let cool, then refrigerate at least 24 hours before eating (flavor improves after 2โ€“3 days).
