Cucumber Sandwiches

Ingredients:

  • 1 medium cucumber, thinly sliced
  • 8 slices of bread (white, whole wheat, or your preference)
  • 1/2 cup cream cheese, softened
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Prepare the Cucumbers:
    • Wash the cucumber thoroughly. You can peel it if you prefer or leave the skin on for added color and texture.
    • Slice the cucumber thinly using a knife or a mandoline.
  2. Make the Cream Cheese Spread:
    • In a bowl, mix the softened cream cheese with chopped fresh dill. Add salt and pepper to taste. Stir until well combined.
  3. Assemble the Sandwiches:
    • Lay out the slices of bread on a clean surface.
    • Spread a layer of the dill cream cheese on each slice of bread.
    • Arrange the thinly sliced cucumber on half of the bread slices.
    • Top with the remaining slices of bread to form sandwiches.
  4. Optional: Cut and Trim:
    • Trim the crusts from the sandwiches if desired.
    • Cut the sandwiches into halves or quarters, creating bite-sized portions.
  5. Serve:
    • Arrange the cucumber sandwiches on a serving platter.
    • Optionally, garnish with additional dill or a sprinkle of black pepper.
  6. Enjoy:
    • Serve the cucumber sandwiches immediately for the freshest taste.
