cucumber radish salad

Ingredients:

  • 2 medium cucumbers, thinly sliced
  • 1 bunch of radishes, thinly sliced
  • 1/4 cup chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • Optional: crumbled feta cheese for garnish

Instructions:

  1. In a large bowl, combine the sliced cucumbers and radishes.
  2. In a small bowl, whisk together the olive oil, lemon juice, chopped dill, chopped parsley, salt, and pepper.
  3. Pour the dressing over the cucumbers and radishes, and toss until everything is evenly coated.
  4. Taste and adjust seasoning if needed.
  5. Optional: Sprinkle crumbled feta cheese on top for an extra burst of flavor.
  6. Serve immediately as a refreshing side dish or refrigerate for later.
