cucumber radish salad

Ingredients:
- 2 medium cucumbers, thinly sliced
- 1 bunch of radishes, thinly sliced
- 1/4 cup chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- Optional: crumbled feta cheese for garnish
Instructions:
- In a large bowl, combine the sliced cucumbers and radishes.
- In a small bowl, whisk together the olive oil, lemon juice, chopped dill, chopped parsley, salt, and pepper.
- Pour the dressing over the cucumbers and radishes, and toss until everything is evenly coated.
- Taste and adjust seasoning if needed.
- Optional: Sprinkle crumbled feta cheese on top for an extra burst of flavor.
- Serve immediately as a refreshing side dish or refrigerate for later.
