🥣 Ingredients

For the Crunchy Protein Clusters

  • 1 cup rolled oats
  • ½ cup vanilla whey or casein protein powder
  • ¼ cup egg whites (or 1 whole egg)
  • 2 tbsp honey or sugar-free syrup
  • 1 tbsp coconut oil (optional but helps crisp)
  • ½ tsp cinnamon
  • Pinch salt

Crunchy Mix-Ins (high-protein + crispy)

  • 1 cup high-protein cereal (Catalina Crunch, Magic Spoon, Premier Protein cereal, etc.)
  • ½ cup roasted almonds or roasted soy nuts (very high protein + super crunchy)
  • ½ cup freeze-dried strawberries or blueberries
  • ½ cup Greek yogurt chips or lightly sweetened yogurt pretzel pieces

Optional “extra protein” boost

  • ¼ cup puffed quinoa
  • ¼ cup collagen powder (mix into clusters before baking)

👩‍🍳 Instructions

1. Make the high-protein crunch clusters

  1. Preheat oven to 325°F (165°C).
  2. In a bowl, combine:
    ✔ oats
    ✔ protein powder
    ✔ egg whites
    ✔ honey/syrup
    ✔ coconut oil
    ✔ cinnamon + salt
  3. Stir until small clumps form—if too dry, add 1–2 tbsp water.
  4. Spread on a parchment-lined sheet.
  5. Bake 12–14 minutes, stirring halfway, until golden and crunchy.
  6. Let cool completely (they crisp fully as they cool).

2. Assemble the snack jars

In each jar, layer:

  • ¼ of the protein clusters
  • ¼ cup high-protein cereal
  • 2 tbsp almonds or soy nuts
  • 2 tbsp freeze-dried fruit
  • 2 tbsp Greek yogurt chips/pretzel bites

Repeat layers so they’re visually fun and crunchy throughout.

Seal tightly.
