Crispy vegetable fritters

Ingredients:

  • 2 cups of assorted vegetables (zucchini, carrots, bell peppers, onions, etc.), grated or finely chopped
  • 1 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 2 eggs
  • 1/4 cup of milk
  • 1/2 cup of grated cheese (optional)
  • 2 cloves of garlic, minced
  • 1/4 cup of chopped fresh herbs (parsley, cilantro, dill, etc.)
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. In a large mixing bowl, combine the grated vegetables, flour, baking powder, eggs, milk, cheese (if using), minced garlic, chopped herbs, salt, and pepper. Mix well until everything is evenly combined.
  2. Heat oil in a large skillet or frying pan over medium heat.
  3. Take a spoonful of the vegetable mixture and carefully drop it into the hot oil, shaping it into a small patty with the back of the spoon. Make sure not to overcrowd the pan.
  4. Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.
  5. Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to drain any excess oil.
  6. Repeat the process with the remaining vegetable mixture, adding more oil to the pan as needed.
  7. Serve the crispy vegetable fritters hot, with your favorite dipping sauce or a side salad.
