🌮 Crispy Vegan Taquitos

Ingredients (Makes ~10 taquitos):

For the Filling:

  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 1/2 cup cooked sweet potato or mashed potato (optional but creamy!)
  • 1/2 cup vegan cheese (optional but tasty)
  • 2 tbsp salsa or hot sauce
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Optional: chopped spinach, corn, or sautéed onions

Other:

  • 8–10 small corn or flour tortillas
  • Olive oil or spray oil for brushing

🔥 Instructions:

  1. Preheat oven to 425°F (220°C) or set air fryer to 375°F (190°C).
  2. Make the filling: In a bowl, mash the beans with a fork or potato masher. Stir in sweet potato, cheese, salsa, spices, and any optional add-ins. Mix until well combined.
  3. Warm tortillas (important!): Microwave them in a damp paper towel for ~30 seconds or until pliable.
  4. Assemble taquitos: Place ~2 tbsp of filling near one edge of a tortilla. Roll it tightly and place seam-side down on a lined baking sheet or in the air fryer basket.
  5. Brush or spray with oil for crispiness.
  6. Bake for 15–20 minutes, or air-fry for 7–10 minutes, until golden and crispy.
