🌮 Crispy Vegan Taquitos
Ingredients (Makes ~10 taquitos):
For the Filling:
- 1 can (15 oz) black beans or pinto beans, drained and rinsed
- 1/2 cup cooked sweet potato or mashed potato (optional but creamy!)
- 1/2 cup vegan cheese (optional but tasty)
- 2 tbsp salsa or hot sauce
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Optional: chopped spinach, corn, or sautéed onions
Other:
- 8–10 small corn or flour tortillas
- Olive oil or spray oil for brushing
🔥 Instructions:
- Preheat oven to 425°F (220°C) or set air fryer to 375°F (190°C).
- Make the filling: In a bowl, mash the beans with a fork or potato masher. Stir in sweet potato, cheese, salsa, spices, and any optional add-ins. Mix until well combined.
- Warm tortillas (important!): Microwave them in a damp paper towel for ~30 seconds or until pliable.
- Assemble taquitos: Place ~2 tbsp of filling near one edge of a tortilla. Roll it tightly and place seam-side down on a lined baking sheet or in the air fryer basket.
- Brush or spray with oil for crispiness.
- Bake for 15–20 minutes, or air-fry for 7–10 minutes, until golden and crispy.
