Ingredients (4 servings)

- 2 tbsp olive oil
- 2 boneless skinless chicken breasts (or thighs), diced
- Salt and black pepper to taste
Vegetables
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup spinach or kale
Flavor Ingredients
- ½ cup sun-dried tomatoes (preferably without added sugar)
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp chili flakes (optional)
Creamy Soup Base
- 4 cups low-sodium chicken broth
- ½ cup heavy cream
- ¼ cup cream cheese
- ¼ cup grated parmesan cheese
Instructions
- Cook chicken
- Heat olive oil in a large pot over medium heat.
- Add chicken, season with salt and pepper, cook until lightly browned.
- Add aromatics
- Stir in onion, garlic, and mushrooms.
- Cook 3–4 minutes until fragrant.
- Add flavor
- Mix in sun-dried tomatoes, paprika, Italian seasoning, and chili flakes.
- Make the soup
- Pour in chicken broth and bring to a gentle simmer.
- Cook 10 minutes so flavors blend.
- Make it creamy
- Stir in cream, cream cheese, and parmesan.
- Mix until smooth and creamy.
- Finish
- Add spinach and cook 2–3 minutes until wilted.
