Creamy Low-Carb Tuscan Shrimp

Ingredients:
- 1 lb shrimp (peeled and deveined)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes (chopped)
- 1/2 cup spinach (fresh)
- 1/4 cup grated Parmesan cheese
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
Instructions:
- Cook the Shrimp:
- Heat olive oil in a large skillet over medium heat.
- Add the shrimp and cook for 2-3 minutes per side until they turn pink and are cooked through.
- Remove the shrimp from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Add the sun-dried tomatoes and cook for another 2-3 minutes.
- Pour in the heavy cream and bring to a simmer. Stir occasionally.
- Add the Parmesan cheese, dried basil, oregano, salt, and pepper. Stir to combine.
- Finish the Dish:
- Add the spinach to the sauce and cook until wilted, about 1-2 minutes.
- Return the shrimp to the skillet, tossing them in the creamy sauce until well coated.
- Let everything simmer together for 2-3 minutes so the flavors meld.
- Serve:
- Garnish with fresh parsley before serving.
- Pair with a side of low-carb vegetables or cauliflower rice for a complete meal.
