Creamy Crack Chicken Soup

Ingredients:
- 1 lb (450g) chicken breast (boneless, skinless)
- 6 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 6 oz cream cheese (cubed)
- 4 slices cooked bacon (crumbled)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried dill
- ½ tsp paprika
- Salt and pepper to taste
- 1 cup chopped spinach (optional for color & nutrients)
- ½ cup chopped green onions or chives
- 1 tbsp butter or olive oil
Instructions:
- Cook the Chicken:
In a large pot, add chicken breasts and chicken broth. Bring to a boil, then reduce to a simmer for about 15–20 minutes or until chicken is cooked through. - Shred the Chicken:
Remove chicken, shred it with two forks, and set aside. - Sauté Additions (optional but adds depth):
In the same pot, melt butter or use a splash of oil. Sauté green onions for 2–3 minutes. - Add Dairy & Seasoning:
Lower the heat and stir in cream cheese until melted and smooth. Add heavy cream, garlic powder, onion powder, dill, paprika, salt, and pepper. - Combine Everything:
Add the shredded chicken back into the pot. Stir in shredded cheddar cheese and crumbled bacon. Let it simmer gently for another 5–10 minutes. - Toss in Spinach (if using):
Add spinach and let it wilt – about 2–3 minutes. - Serve Hot:
