Creamy Carrot Salad

Ingredients

4 cups shredded carrot (about 6 large carrots)

½ cup mayonnaise

⅓ cup sour cream

1 tablespoon apple cider vinegar

1 cup raisins

8 ounces crushed pineapple (lightly drained, 1 can)

Salt and black pepper, to taste

Instructions

Prepare the carrots:

Shred the carrots using a box grater or a food processor and place them in a large mixing bowl.

Mix the dressing:

In a small bowl, whisk together mayonnaise, sour cream, and apple cider vinegar until smooth.

Combine ingredients:

Add the dressing to the shredded carrots. Stir in the raisins and crushed pineapple.

Season and chill:

Season with salt and pepper to taste. Mix everything well. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve:

Serve the salad chilled as a side dish or a light snack.
