Creamy Broccoli, Cauliflower, Corn, and Bacon Salad

Ingredients:
- 1 cup broccoli florets (chopped small)
- 1 cup cauliflower florets (chopped small)
- 1 cup sweet corn (cooked or canned, drained)
- 4–5 strips of cooked crispy bacon (chopped)
- ¼ cup red onion (finely chopped)
- ½ cup shredded cheddar cheese (optional but tasty)
For the Creamy Dressing:
- ½ cup mayonnaise
- 2 tbsp sour cream or Greek yogurt
- 1 tsp Dijon mustard (optional for a tangy kick)
- 1 tsp apple cider vinegar or lemon juice
- Salt & pepper to taste
Instructions:
- Prep the Veggies: Lightly blanch the broccoli and cauliflower if desired (for a softer bite), then chop them into small, bite-sized pieces.
- Mix the Base: In a large bowl, combine broccoli, cauliflower, corn, bacon, red onion, and cheese.
- Make the Dressing: In a small bowl, whisk together mayo, sour cream, mustard, vinegar/lemon juice, salt, and pepper.
- Toss Together: Pour the dressing over the salad and mix until everything is evenly coated.
- Chill & Serve: Cover and refrigerate for at least 30 minutes before serving for best flavor.
Tips:
- Want it healthier? Use Greek yogurt instead of mayo.
- Add sunflower seeds or chopped nuts for crunch.
