Creamy Broccoli, Cauliflower, Corn, and Bacon Salad

🥗 Ingredients:

  • 1 cup broccoli florets (chopped small)
  • 1 cup cauliflower florets (chopped small)
  • 1 cup sweet corn (cooked or canned, drained)
  • 4–5 strips of cooked crispy bacon (chopped)
  • ¼ cup red onion (finely chopped)
  • ½ cup shredded cheddar cheese (optional but tasty)

🥣 For the Creamy Dressing:

  • ½ cup mayonnaise
  • 2 tbsp sour cream or Greek yogurt
  • 1 tsp Dijon mustard (optional for a tangy kick)
  • 1 tsp apple cider vinegar or lemon juice
  • Salt & pepper to taste

Instructions:

  1. Prep the Veggies: Lightly blanch the broccoli and cauliflower if desired (for a softer bite), then chop them into small, bite-sized pieces.
  2. Mix the Base: In a large bowl, combine broccoli, cauliflower, corn, bacon, red onion, and cheese.
  3. Make the Dressing: In a small bowl, whisk together mayo, sour cream, mustard, vinegar/lemon juice, salt, and pepper.
  4. Toss Together: Pour the dressing over the salad and mix until everything is evenly coated.
  5. Chill & Serve: Cover and refrigerate for at least 30 minutes before serving for best flavor.

  • Want it healthier? Use Greek yogurt instead of mayo.
  • Add sunflower seeds or chopped nuts for crunch.
