Crack Slaw

Ingredients:

  • 1 lb ground beef or pork (you can also use ground turkey or chicken)
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 1 medium-sized cabbage, thinly sliced
  • 2 medium-sized carrots, julienned or grated
  • 2 green onions, chopped
  • Salt and pepper, to taste
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Heat the sesame oil and olive oil in a large skillet or wok over medium-high heat.
  2. Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
  3. Add the sliced onion, minced garlic, and grated ginger to the skillet. Cook for a few minutes until the onion is softened and the garlic is fragrant.
  4. In a small bowl, mix together soy sauce, rice vinegar, and Sriracha sauce.
  5. Pour the sauce mixture over the meat and vegetables in the skillet. Stir well to combine.
  6. Add the sliced cabbage and julienned/grated carrots to the skillet. Stir-fry for about 5-7 minutes or until the vegetables are tender-crisp.
  7. Season with salt and pepper to taste. Adjust the Sriracha sauce if you want more heat.
  8. Remove the skillet from heat and stir in chopped green onions.
  9. Serve hot, garnished with sesame seeds if desired.
