Crack Slaw

Ingredients:
- 1 lb ground beef or pork (you can also use ground turkey or chicken)
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/4 cup soy sauce (or tamari for a gluten-free option)
- 1 tablespoon rice vinegar
- 1 tablespoon Sriracha sauce (adjust to taste)
- 1 medium-sized cabbage, thinly sliced
- 2 medium-sized carrots, julienned or grated
- 2 green onions, chopped
- Salt and pepper, to taste
- Sesame seeds, for garnish (optional)
Instructions:
- Heat the sesame oil and olive oil in a large skillet or wok over medium-high heat.
- Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
- Add the sliced onion, minced garlic, and grated ginger to the skillet. Cook for a few minutes until the onion is softened and the garlic is fragrant.
- In a small bowl, mix together soy sauce, rice vinegar, and Sriracha sauce.
- Pour the sauce mixture over the meat and vegetables in the skillet. Stir well to combine.
- Add the sliced cabbage and julienned/grated carrots to the skillet. Stir-fry for about 5-7 minutes or until the vegetables are tender-crisp.
- Season with salt and pepper to taste. Adjust the Sriracha sauce if you want more heat.
- Remove the skillet from heat and stir in chopped green onions.
- Serve hot, garnished with sesame seeds if desired.
