Corn Salad served on Creamy Avocado, Herb and Citrus Rice

INGRIDIENTS

Corn on the Cob

Vegan Mayo

Vegan Shredded Parmesan

Tajin seasoning

Cilantro

Red Onion

Jalapeno

Limes

Yellow Pepper (Sweet)

Corn and Corn Salad

1.Coat corn in Mayo and Season (Garlic and Tajin)

  1. Place on Grill
  2. Grilled until it gets a nice color..I like a little char…
  3. You will cut the kernels off the cob for the salad.
  4. Place the cut kernels in a bowl

Salad:

Kernels

Diced red onion

Lime juice

Garlic

Tajin

Yellow Pepper

Diced jalapeno

Cilantro

Vegan Mayo (very little)

Sprinkle with Tajin (as much or as little as you want)

Top with corn salad, Vegan Parm and extra cilantro!

Prepare for Magic!!!
