Cookie Dough Keto Fat Bombs

🧈 Ingredients:

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup cream cheese (softened)
  • 1/3 cup powdered erythritol (like Swerve or Monk Fruit)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup sugar-free chocolate chips (like Lily’s)

🍴 Instructions:

  1. In a mixing bowl, cream together the softened butter and cream cheese until smooth.
  2. Add in the powdered erythritol, vanilla extract, and a pinch of salt. Mix well.
  3. Stir in almond flour and coconut flour until a thick dough forms.
  4. Fold in the sugar-free chocolate chips.
  5. Use a cookie scoop or spoon to form bite-sized balls.
  6. Place them on a parchment-lined tray and freeze for 30–45 minutes until firm.
  7. Store in an airtight container in the fridge or freezer.
