🧈 Ingredients:
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup unsalted butter (softened)
- 1/4 cup cream cheese (softened)
- 1/3 cup powdered erythritol (like Swerve or Monk Fruit)
- 1 tsp vanilla extract
- Pinch of salt
- 1/4 cup sugar-free chocolate chips (like Lily’s)
🍴 Instructions:
- In a mixing bowl, cream together the softened butter and cream cheese until smooth.
- Add in the powdered erythritol, vanilla extract, and a pinch of salt. Mix well.
- Stir in almond flour and coconut flour until a thick dough forms.
- Fold in the sugar-free chocolate chips.
- Use a cookie scoop or spoon to form bite-sized balls.
- Place them on a parchment-lined tray and freeze for 30–45 minutes until firm.
- Store in an airtight container in the fridge or freezer.
