Cookie Dough Keto Fat Bombs
Ingredients:
- 1 cup almond flour
- 1/4 cup unsweetened peanut butter (or almond butter)
- 1/4 cup coconut oil (melted)
- 2 tbsp butter (softened)
- 2 tbsp powdered erythritol (or sweetener of choice)
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup sugar-free chocolate chips
Instructions:
- In a large bowl, combine almond flour, peanut butter, melted coconut oil, softened butter, and erythritol.
- Add the vanilla extract and salt, then mix everything together until smooth and well combined.
- Stir in the sugar-free chocolate chips to the dough.
- Roll the dough into small balls, about 1 inch in diameter.
- Place them on a parchment-lined tray and refrigerate for at least 1 hour, until firm.
- Once chilled, enjoy your cookie dough fat bombs as a keto-friendly snack!
Optional:
- For added texture, you can roll the fat bombs in unsweetened shredded coconut or crushed nuts before refrigerating.
