Cookie Dough Keto Fat Bombs

Ingredients:

  • 1 cup almond flour
  • 1/4 cup unsweetened peanut butter (or almond butter)
  • 1/4 cup coconut oil (melted)
  • 2 tbsp butter (softened)
  • 2 tbsp powdered erythritol (or sweetener of choice)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup sugar-free chocolate chips

Instructions:

  1. In a large bowl, combine almond flour, peanut butter, melted coconut oil, softened butter, and erythritol.
  2. Add the vanilla extract and salt, then mix everything together until smooth and well combined.
  3. Stir in the sugar-free chocolate chips to the dough.
  4. Roll the dough into small balls, about 1 inch in diameter.
  5. Place them on a parchment-lined tray and refrigerate for at least 1 hour, until firm.
  6. Once chilled, enjoy your cookie dough fat bombs as a keto-friendly snack!

Optional:

  • For added texture, you can roll the fat bombs in unsweetened shredded coconut or crushed nuts before refrigerating.
