Coconut Lime Fish Soup

Here’s what you’ll need:

1 lb white fish fillets (cod, halibut, or tilapia)
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 tbsp ginger, minced
1 tbsp red curry paste
1 can (13.5 oz) coconut milk
2 cups fish or vegetable broth
Juice of 1 lime
Salt and pepper to taste
Fresh cilantro for garnish

Instructions:

1. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and ginger. Sauté until the onion is translucent.

2. Stir in the red curry paste and cook for another minute to release its flavors.

3. Pour in the coconut milk and broth, bringing the mixture to a gentle simmer.

4. Add the white fish fillets and cook for about 5-7 minutes, or until the fish is cooked through and flakes easily.

5. Squeeze in the lime juice and season with salt and pepper to taste.

6. Serve the soup hot, garnished with fresh cilantro.
