Classic Hawaiian Macaroni Salad recipe

Ingredients

  • 2 cups elbow macaroni
  • 1/4 cup grated carrot
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 2 cups mayonnaise (preferably Best Foods or Hellmann’s)
  • 1/4 cup milk
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Cook the Macaroni:
    • Bring a large pot of salted water to a boil. Add the macaroni and cook until very soft, about 10-12 minutes. Drain and rinse under cold water.
  2. Prepare the Dressing:
    • In a large bowl, whisk together the mayonnaise, milk, apple cider vinegar, sugar, salt, and pepper until smooth.
  3. Combine Ingredients:
    • Add the cooked macaroni to the dressing and stir until evenly coated.
    • Add the grated carrot, chopped celery, and chopped onion. Mix well.
  4. Chill and Serve:
    • Cover the salad and refrigerate for at least 1 hour before serving, allowing the flavors to meld. It’s best served cold.
  5. Adjust Seasoning:
    • Taste and adjust the seasoning with additional salt, pepper, or sugar if needed before serving.
