πŸ₯— Classic Black Bean and Corn Salad


Ingredients:


1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn (or 1 Β½ cups fresh/frozen, thawed)

1 red bell pepper, diced

1/2 small red onion, finely chopped

1/4 cup chopped fresh cilantro

Juice of 2 limes

2 tbsp olive oil

Salt and pepper to taste

Optional Add-ins:


1 avocado, diced

1 jalapeΓ±o, seeded and minced

1/2 tsp cumin or chili powder for a flavor boost

Instructions:
In a large bowl, combine the beans, corn, red bell pepper, onion, and cilantro.

In a small bowl, whisk together the lime juice, olive oil, salt, and pepper (add cumin or chili powder if using).

Pour dressing over the salad and toss well to combine.

Chill for 15–30 minutes if possible before serving to let the flavors meld.

Add avocado just before serving (optional).
