Chocolate nut clusters

Ingredients:

  • 1 cup mixed nuts (e.g., almonds, cashews, walnuts, pecans) or your favorite nuts
  • 1 cup sugar-free chocolate chips (or dark chocolate chips if you’re not strictly keto)
  • 1-2 tbsp coconut oil (or butter, for extra richness)
  • ½ tsp vanilla extract (optional)
  • A pinch of salt (optional, to enhance the flavor)

Instructions:

  1. Prep the Nuts:
    • If you’re using whole nuts, chop them into smaller pieces. You can also lightly toast the nuts in a dry skillet over medium heat for 3-5 minutes to bring out their flavor, but this is optional.
  2. Melt the Chocolate:
    • In a microwave-safe bowl, melt the chocolate chips and coconut oil (or butter) together. You can do this in the microwave in 20-30 second intervals, stirring in between, until the chocolate is smooth and fully melted.
    • Alternatively, melt the chocolate and coconut oil in a heatproof bowl over a pot of simmering water (double boiler method).
  3. Combine Nuts and Chocolate:
    • Once the chocolate is melted, stir in the vanilla extract (if using) and a pinch of salt (optional) for extra flavor.
    • Add the chopped nuts to the melted chocolate and stir until the nuts are well-coated.
  4. Form the Clusters:
    • Drop spoonfuls of the chocolate-nut mixture onto a parchment-lined baking sheet or tray. Each spoonful will form a cluster shape.
    • If you want smaller or larger clusters, adjust the size accordingly.
  5. Chill:
    • Place the tray in the fridge or freezer for 20-30 minutes (depending on your preference for firmness) until the chocolate hardens and the clusters set.
  6. Serve:
    • Once set, remove the chocolate nut clusters from the parchment paper and store them in an airtight container in the fridge or at room temperature if you prefer them softer.

Variations:

  • Sweeteners: If you’d like to add a bit of sweetness, you can stir in a sweetener like stevia, erythritol, or monk fruit before melting the chocolate.
  • Other Add-ins: You can add a bit of dried fruit, such as unsweetened cranberries or shredded coconut, for extra flavor and texture.
  • Nut Butter: For a creamier option, you can add a spoonful of almond butter or peanut butter to the melted chocolate for a nutty, smooth finish.
