Chicken souvlaki in the air fryer
Ingredients:
4 boneless, skinless chicken breasts or thighs, cut into cubes
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Tzatziki sauce, for serving
Pita bread or rice, for serving
Optional toppings: diced tomatoes, sliced cucumbers, chopped red onions, feta cheese, etc.

Instructions:
In a mixing bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, paprika, salt, and black pepper. Stir until well combined.
Add the cubed chicken to the bowl with the marinade. Toss until the chicken is evenly coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, or preferably up to 2 hours.
Preheat your air fryer to 200°C (390°F) for about 5 minutes.
Once the chicken has finished marinating, thread the chicken cubes onto skewers.
Place the skewers in the preheated air fryer basket in a single layer, leaving space between each skewer for air circulation.
Air fry the chicken souvlaki at 200°C (390°F) for 10-12 minutes, flipping the skewers halfway through the cooking time, until the chicken is cooked through and golden brown on the outside.
Once cooked, carefully remove the chicken souvlaki from the air fryer.
Serve the chicken souvlaki hot with tzatziki sauce, pita bread or rice, and your favorite toppings.
