Chicken and Broccoli Cheesy Casserole

Ingredients:

  • 2 cups cooked chicken (shredded or cubed)
  • 2 cups broccoli florets (steamed or lightly blanched)
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese (optional, for extra cheesiness)
  • 1/2 cup cream cheese (softened)
  • 1/2 cup sour cream
  • 1/4 cup heavy cream or milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp paprika (optional, for a little color)
  • 1/4 cup grated parmesan cheese (for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the cream cheese, sour cream, heavy cream, garlic powder, onion powder, salt, and pepper until smooth.
  3. Add the cooked chicken and broccoli to the bowl and gently mix to coat everything in the creamy sauce.
  4. Stir in the shredded cheddar cheese and mozzarella cheese.
  5. Pour the mixture into a greased 9×9-inch casserole dish.
  6. Sprinkle the top with parmesan cheese and a little paprika if using.
  7. Bake for about 20–25 minutes, or until bubbly and the top is slightly golden.
  8. Let it cool for a few minutes before serving.

Tips:

  • You can add cooked mushrooms, bell peppers, or spinach for extra veggies.
  • Use rotisserie chicken for a quicker prep.
  • For a crunchy topping, add a handful of crushed pork rinds or breadcrumbs mixed with butter before baking.
