Chicken and Broccoli Cheesy Casserole

Ingredients:
- 2 cups cooked chicken (shredded or cubed)
- 2 cups broccoli florets (steamed or lightly blanched)
- 1 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese (optional, for extra cheesiness)
- 1/2 cup cream cheese (softened)
- 1/2 cup sour cream
- 1/4 cup heavy cream or milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp paprika (optional, for a little color)
- 1/4 cup grated parmesan cheese (for topping)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix together the cream cheese, sour cream, heavy cream, garlic powder, onion powder, salt, and pepper until smooth.
- Add the cooked chicken and broccoli to the bowl and gently mix to coat everything in the creamy sauce.
- Stir in the shredded cheddar cheese and mozzarella cheese.
- Pour the mixture into a greased 9×9-inch casserole dish.
- Sprinkle the top with parmesan cheese and a little paprika if using.
- Bake for about 20–25 minutes, or until bubbly and the top is slightly golden.
- Let it cool for a few minutes before serving.
Tips:
- You can add cooked mushrooms, bell peppers, or spinach for extra veggies.
- Use rotisserie chicken for a quicker prep.
- For a crunchy topping, add a handful of crushed pork rinds or breadcrumbs mixed with butter before baking.
