Chic peas salad
Chic peas salad
Ingredients:
Fresh parsley leaves and stems
Celery
Red onion
Red pepper
Cucumber w/o seeds
Chic peas
Chopped Almonds
Lemon juice & olive oil
Options:
– add chopped spinach or kale
– use a lemon salad dressing instead of fresh lemon. I’ve used the one by Panera
Instructions:
- Rinse the parsley leaves and stems and chop them finely. You can use a food processor or a knife for this. You will need about 2 cups of chopped parsley.
- Rinse the celery and chop it finely. You will need about 1/4 cup of chopped celery.
- Peel and dice the red onion. You will need about 1/4 cup of diced onion.
- Rinse and dice the red pepper. You will need about 1/2 cup of diced pepper.
- Rinse and peel the cucumber. Cut it in half and scoop out the seeds with a spoon. Chop the cucumber finely. You will need about 1 cup of chopped cucumber.
- Drain and rinse the chickpeas. You will need about 1 1/2 cups of chickpeas.
- Toast the chopped almonds in a skillet over medium heat, stirring occasionally, until golden and fragrant, about 10 minutes. You will need about 1/4 cup of toasted almonds.
- In a small bowl, whisk together the lemon juice and olive oil. You will need about 1/4 cup of lemon juice and 2 tablespoons of olive oil. Season with salt and pepper to taste.
- In a large bowl, toss together the parsley, celery, onion, pepper, cucumber, chickpeas, and almonds. Drizzle the lemon dressing over the salad and toss to coat. Adjust the seasoning if needed.
- If you want to add chopped spinach or kale, you can do so at this point. You will need about 2 cups of chopped greens. You can also use a lemon salad dressing instead of fresh lemon juice and olive oil
