Cherry Cheesecake Egg Rolls

Ingredients:

  • 1 cup cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup cherry pie filling
  • 8–10 egg roll wrappers
  • Oil for frying
  • Optional: powdered sugar for dusting or drizzle of melted chocolate

Instructions:

  1. Make the Filling:
    In a bowl, mix softened cream cheese, powdered sugar, and vanilla until smooth.
  2. Assemble Egg Rolls:
    Lay out an egg roll wrapper. Spread 1 tbsp of cream cheese filling in the center, then add 1 tbsp of cherry pie filling on top. Fold sides in, roll up tightly, and seal edges with a dab of water.
  3. Fry:
    Heat oil in a pan (about 350°F/175°C). Fry each roll for 2–3 minutes per side or until golden brown.
  4. Drain & Cool:
    Place on paper towels to drain excess oil. Let them cool for a few minutes (filling will be hot!).
  5. Serve:
    Dust with powdered sugar or drizzle with melted chocolate if you like. Serve warm!
