Cheesy Vegetable Bites

Ingredients:


1 cup shredded cheese (cheddar, mozzarella, or a mix)
1 cup finely chopped vegetables (bell peppers, onions, jalapeños, etc.)
1 cup cooked and finely chopped or mashed potatoes
1/2 cup bread crumbs (use gluten-free if needed)
1/4 cup finely chopped fresh parsley or cilantro
2 eggs, beaten
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1/2 tsp salt
Cooking spray


Instructions:


Prepare the Mixture:In a large mixing bowl, combine the shredded cheese, chopped vegetables, cooked potatoes, bread crumbs, parsley or cilantro, garlic powder, onion powder, black pepper, and salt.
Add the beaten eggs to the mixture and mix well until all ingredients are thoroughly combined. The mixture should be sticky and hold together when pressed.
Shape the Bites:Using your hands, take small portions of the mixture and shape them into bite-sized balls. If the mixture is too sticky, you can lightly coat your hands with some oil or water to make shaping easier.
Preheat the Air Fryer:Preheat your air fryer to 375°F (190°C) for about 5 minutes.
Air Fry the Bites:Lightly spray the air fryer basket with cooking spray to prevent sticking.
Place the shaped vegetable bites in the basket, ensuring they are not touching each other. You may need to cook them in batches depending on the size of your air fryer.
Lightly spray the tops of the bites with cooking spray to help them crisp up.
Cook:Air fry the vegetable bites at 375°F (190°C) for 10-12 minutes, or until they are golden brown and crispy on the outside. Shake the basket halfway through the cooking time to ensure even cooking.
Serve:Remove the bites from the air fryer and let them cool slightly before serving.
