Cheesy Ground Beef and Cauliflower Rice Casserole
Ingredients
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 lb lean ground beef (I used ground turkey)
1 tsp Italian seasoning
1/2 tsp sweet paprika
Salt and pepper to taste
6 oz fresh baby spinach
1-10 oz package Cauliflower rice, cooked according to the package
1 cup sour cream
1 tbsp butter
1/2 tsp dried basil
2-3 tbsp milk if needed (I didn’t use this)
8 oz shredded cheese (I used mozzarella)
Instructions
Preheat oven to 375.
Heat oil in a large skillet over med-high heat.
Add onions and cook 2 min.
Stir in garlic and cook for 20 sec.
Add ground meat, Italian seasoning, paprika, salt and pepper.
Cook breaking up the meat until its cooked thru.
Add in spinach, stirring frequently until it’s wilted.
Remove from heat, drain liquid, and set aside.
In a 9×13 dish, combine cooked cauliflower rice, sour cream, butter and basil. Stir until completely combined and creamy. If sour cream and butter aren’t melting completely stir in some milk. (The rice should be warm enough to melt the butter)
Add ground meat mixture and stir well.
Top with shredded cheese.
Bake for 22-25 min until cheese is melted and bubbly.
Remove from oven and let stand for several minutes before cutting.
