Cheesy Garlic Shrimp Bread Bowl

Ingredients:

For the Keto Bread Bowl:

  • 1 ½ cups mozzarella cheese, shredded
  • 2 tbsp cream cheese
  • ¾ cup almond flour
  • 1 tsp baking powder
  • 1 egg
  • ½ tsp garlic powder

For the Cheesy Garlic Shrimp Filling:

  • 1 tbsp butter
  • 3 cloves garlic, minced
  • ½ lb shrimp, peeled & deveined
  • ½ cup heavy cream
  • ¼ cup parmesan cheese, grated
  • ¼ cup mozzarella cheese, shredded
  • ½ tsp Italian seasoning
  • Salt & pepper, to taste
  • 1 tbsp fresh parsley, chopped

Instructions:

Make the Keto Bread Bowl:

  1. Preheat oven to 375°F (190°C).
  2. Melt mozzarella and cream cheese together in the microwave (about 40 seconds), then mix well.
  3. Add almond flour, baking powder, garlic powder, and egg. Knead until a smooth dough forms.
  4. Shape into a small bowl or use a muffin tin to create mini bowls.
  5. Bake for 12-15 minutes until golden brown and firm.

Prepare the Cheesy Garlic Shrimp Filling:

  1. Heat butter in a pan, then sauté garlic until fragrant.
  2. Add shrimp, season with salt, pepper, and Italian seasoning, and cook for 2-3 minutes per side until pink.
  3. Pour in heavy cream and let it simmer for 2 minutes.
  4. Stir in parmesan and mozzarella cheese, mixing until smooth and creamy.
  5. Remove from heat and garnish with fresh parsley.

Assemble & Serve:

  1. Spoon the cheesy shrimp mixture into the keto bread bowl.
  2. Top with extra mozzarella and broil for 2-3 minutes until bubbly and golden.
