Cheesy Garlic Shrimp Bread Bowl

Ingredients:
For the Keto Bread Bowl:
- 1 ½ cups mozzarella cheese, shredded
- 2 tbsp cream cheese
- ¾ cup almond flour
- 1 tsp baking powder
- 1 egg
- ½ tsp garlic powder
For the Cheesy Garlic Shrimp Filling:
- 1 tbsp butter
- 3 cloves garlic, minced
- ½ lb shrimp, peeled & deveined
- ½ cup heavy cream
- ¼ cup parmesan cheese, grated
- ¼ cup mozzarella cheese, shredded
- ½ tsp Italian seasoning
- Salt & pepper, to taste
- 1 tbsp fresh parsley, chopped
Instructions:
Make the Keto Bread Bowl:
- Preheat oven to 375°F (190°C).
- Melt mozzarella and cream cheese together in the microwave (about 40 seconds), then mix well.
- Add almond flour, baking powder, garlic powder, and egg. Knead until a smooth dough forms.
- Shape into a small bowl or use a muffin tin to create mini bowls.
- Bake for 12-15 minutes until golden brown and firm.
Prepare the Cheesy Garlic Shrimp Filling:
- Heat butter in a pan, then sauté garlic until fragrant.
- Add shrimp, season with salt, pepper, and Italian seasoning, and cook for 2-3 minutes per side until pink.
- Pour in heavy cream and let it simmer for 2 minutes.
- Stir in parmesan and mozzarella cheese, mixing until smooth and creamy.
- Remove from heat and garnish with fresh parsley.
Assemble & Serve:
- Spoon the cheesy shrimp mixture into the keto bread bowl.
- Top with extra mozzarella and broil for 2-3 minutes until bubbly and golden.
