Cheesy Brussels Sprouts with Bacon
Ingredients:
2 slices thick cut bacon, chopped
1 lb. Brussels Sprouts, sliced in half
1/4 cup heavy whipping cream
1/3 cup grated parmesan cheese
1 Tbsp. minced garlic
1/2 cup shredded gruyere cheese (or what you have)
Salt and pepper to taste
Instructions:
1. Preheat oven to 375 F.
2. In a large oven safe skillet, brown the bacon until crispy, remove from the skillet & set aside on a paper towel lined plate.
3. Add the sliced Brussels sprouts cut side down to the skillet & allow the sprouts to cook undisturbed in the bacon grease for 4-5 minutes. Flip when the sprouts are golden brown. Cook 2-3 more minutes & remove from the skillet.
4. Wipe the skillet clean & add heavy cream, garlic & parm. Let the mixture simmer over medium low for a few minutes until it begins to bubble. Be sure to stir or the cheese will stick to the bottom of the pan.
When a thick Alfredo sauce has formed, remove from heat.
5. Add the sprouts cut side down and top with the shredded cheese and half of the bacon.
6. Bake at 375 F. for 15 minutes. Add the additional bacon, salt & pepper to taste. Serve immediately.
Servings: 6 – 1/2 cup servings at 4.6g net carbs
