Cheesecake Stuffed Chocolate Chip Cookies
Ingredients:
– 1 cup (2 sticks) unsalted butter, softened
– 3/4 cup granulated sugar
– 3/4 cup packed light brown sugar
– 2 large eggs
– 1 tablespoon vanilla extract
– 3 1/2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 2 cups chocolate chips
– 8 oz cream cheese, softened
– 1/4 cup granulated sugar
– 1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and mix until well combined.
5. Fold in the chocolate chips.
6. In another bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
7. Scoop a tablespoon of cookie dough and flatten it in your palm. Place a teaspoon of the cream cheese mixture in the center and fold the cookie dough around it, forming a ball.
8. Place the stuffed cookie dough balls on the prepared baking sheet and bake for 12-15 minutes, or until the edges are golden brown.
9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
